Shiun, presently the very top grade of organic matcha from Mr. Nakanishi in Kyoto who is by far and away producing the finest quality organic matcha in Japan. Nothing else comes close to his top grades.
Shiun is made exclusively from the very finest hand-picked and sorted saemidori tea leaves, processed into genuine organic tencha, and then stone-ground into genuine organic matcha. It is really to be used for preparing Koicha (thick matcha), but you can of course use it to make usucha if you wish.
